Buttermilk Waffles with Meyer Lemon Syrup

 
Like Sunshine on a Cloudy Day, Using the lemon oil or grated lemon rind and finishing this recipe with Restaurant Lulu Meyer Lemon Syrup is what makes this recipe so fabulous.  These waffles will light up your morning or evening.
2 1/4 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 eggs, beaten
2 c. buttermilk
1/2 tsp. vanilla (optional)
8 Tbsp. butter, melted
Restaurant Lulu Meyer Lemon Syrup 
1/4 tsp. lemon oil or 1 tsp. grated lemon rind (optional)
1/2 cup frozen or fresh blueberries (optional)
Whisk together flour, baking powder, salt and baking soda. Add eggs, buttermilk, vanilla and butter. Stir together well.If batter seems too thick, add a tablespoon or two of buttermilk; if batter seems too thin, add a tablespoon or two of extra flour. Stir to mix.
Pour batter into a preheated waffle iron and cook until crisp and golden.
